Meet Elizabeth
It is easy to look at me and stereotype me as yet another yoga pants wearing, quinoa eating, basic b*tch dietitian with an all-beige personality. And I get it! I do love a good pair of yoga pants, and I have nothing against quinoa or the color beige. But before you put me in that box, allow me to introduce myself.
Who is she?
Hi, I am Elizabeth! I am loud, inappropriate, and love food. When I say I love food, you might still be thinking that I love healthy food and counting my macros. But what I mean when I say I love food is that I love ALL food. That is why I got into the field of nutrition, not because I wanted to get more people to eat cauliflower rice. My goal as a dietitian is to get more people to realize they don’t have to eat cauliflower rice to be healthy. Cauliflower is great, but have you ever had homemade chicken and waffles or a fresh chocolate chip cookie?? Those are the foods that are truly the spice of life!
A few other fun facts that might surprise you about me:
1. Since I was 15, I have been working at a local restaurant baking all their desserts, I still help out seasonally to fill Thanksgiving pie orders.
2. I grew up on a farm and am no stranger to manual labor and getting dirty. This has made me a bit of a gardening fanatic and a master at adding veggies to anything (maybe that part is less surprising…)
3. I hate going to the gym. I prefer staying active through daily living. I do a lot of hiking, snowboarding, and difficult tasks around the house.
What is her philosophy?
I have spent my entire career working with elite athletes. Which means not only do I specialize in building strong and healthy individuals, I also specialize in giving a healthy dose of reality, with a splash of colorful language. If you are looking for a cheer leader to hold your hand and help you lose 5 pounds and get back into those jeans from high school, you are in the wrong place. I am going to tell you to burn those jeans and challenge your beliefs on why you need to fit into them in the first place. Working with me is about feeling strong and confident, not about sacrificing health to fit an aesthetic. I believe in building a well nourished life free of restriction and bland foods. You truly can have your cake and eat it too!
What is it like to work with Elizabeth?
Here is what you can expect when working with me:
• Science backed recommendations -- We are going to put our nerd hats on and dig into the science of nutrition. For every topic we discuss, not only will we cover the literature, we will also talk about the reality of how those recommendations can be implemented into your own life. Sometimes reality doesn’t align perfectly with science and that is ok. No bro science or celebrity trends here! Just scientifically backed recommendations tailored to fit you.
• The honest truth – I will give you all of the information needed to know WHY certain changes will positively impact your health and goals to support HOW to implement behavior change. But actually making that change happen is on you to step outside of your comfort zone and give it a shot. If you are 35 and not eating a single vegetable, what is wrong with you? Grow up and eat a f*cking carrot!
• A really fun learning experience – Most diet programs have two things in common. They are absolutely miserable (have you ever tried 75 hard?) and they require you to stick to an unsustainable program to continue seeing results. That is not the case when you work with me. While I might call you out for being dehydrated AF, we are going to make the learning process a fun one with small, sustainable goals along the way. This will ensure that you have all the information to sustain behavior change long after you leave me in the dust. It will also help you to remember everything you learned by presenting it in fun, easy to digest ways.
