Garlic Mashed Potatoes

These mashed potatoes are light on the butter and cream, but not the flavor! This recipe is a fan favorite around my family dinner table.

Garlic Mashed potatoes

Makes 10-12 servings

Ingredients:

  • 1 bulb garlic

  • 2-3 Tbsp olive oil

  • 5 pounds Yukon Gold or Russet potatoes

  • 4 Tbsp butter

  • 1/2 -1 cup 2% milk

  • Salt and pepper to taste

Optional Toppings

  • 3 Tbsp chives, chopped

  • 2 fresh rosemary sprigs

  • 1/3 cup shredded cheddar cheese or Boursin

Directions:

  1. Preheat oven to 350° F.

  2. Trim the top 1/4 inch off your garlic bulb. Place the garlic cut side up on a piece of foil, drizzle with olive oil, and wrap tightly in foil. Bake for 40-60 minutes or until the cloves are a deep golden brown and fully softened.

  3. Wash the potatoes. Feel free to peel them or leave the skins on. Cut your potatoes into approximately 1 inch cubes.

  4. Place cut potatoes into a large pot and fill with water. Water should be approximately 1 inch above potatoes. Bring the water to a boil over medium high heat and cook for approximately 10-12 minutes, or until a fork inserted in the middle of a potato goes in easily with almost no resistance.

  5. Drain cooked potatoes completely and return to the pot. Using a potato masher, lightly mash your potatoes. Some people like to use a hand mixer for this step, but I find it over whips the potatoes and gives a gluey texture.

  6. Add your cooked garlic and butter. Depending on the size of the bulb I usually add 3/4 of the bulb. Feel free to adjust for more or less. Continue mashing to incorporate the butter and garlic. Slowly stream in the milk as you mash until you reach your desired consistency.

  7. Add salt and pepper to taste. Once plated, add any desired toppings such as chives, rosemary, or cheese.

Feel free to make this recipe your own by adding your own twist!

  • Want it a little creamier? If you are looking for that true silky mashed potato texture, try adding low fat cream cheese or Greek yogurt. I would recommend starting with approximately 3 Tbsp and adding in small amounts to achieve desired consistency.

  • Looking for more flavor? Especially if you are serving this as a holiday dish, you might consider adding sprigs of rosemary with your garlic as it roasts to deepen the fall flavors. You could also add diced and caramelized onion or shallot if you are going for a garlic/onion flavor.
