Protein Packed Buffalo Chicken Dip
This recipe is perfect for any fall tailgate or as an easy snack. By ditching the full fat cream cheese, you are able to reduce the total fat and calories while increasing the protein content of this tasty dip!
Protein Packed Buffalo Chicken Dip
Makes 8-10 servings
Ingredients:
2 cups shredded cooked chicken (a rotisserie chicken is perfect for this!)
1 cup plain Greek yogurt (full-fat or 2% works best for creaminess)
4 ounces light cream cheese, softened
1/2 cup buffalo sauce (like Frank's RedHot)
1/4 cup crumbled blue cheese, plus more for topping
1/2 cup shredded sharp cheddar cheese, divided
1/4 teaspoon garlic powder
Pinch of black pepper
Optional garnishes: chopped chives, green onions, or a drizzle of ranch dressing
Directions:
Preheat your oven to 375°F (190°C). Lightly grease a medium-sized baking dish or oven-safe skillet.
In a large bowl, combine the shredded chicken, plain Greek yogurt, softened light cream cheese, buffalo sauce, and garlic powder. Stir until everything is well-mixed and the cream cheese is fully incorporated.
Fold in the crumbled blue cheese and about a third of the shredded cheddar cheese. Season with a pinch of black pepper.
Spoon the mixture into your prepared baking dish. Top evenly with the remaining shredded cheddar cheese.
Place the dish in the preheated oven and bake for 20-25 minutes, or until the dip is hot, bubbly, and the cheese on top is melted and golden brown.
Remove from the oven and let it cool for a few minutes. If you're using them, sprinkle with chives or green onions and a little extra crumbled blue cheese on top. Serve hot!
