Chicken Elote Salad
Looking for a simple dinner for 2? Here is a meal in under 30 minutes that will leave you feeling satisfied and with very little clean up!
Elote Chicken Salad
Makes 2-4 servings
Ingredients:
2 cups cooked chicken (I use rotisserie chicken)
1 bag frozen sweet corn
1 Tbsp olive oil
½ red onion, finely diced
1 jalapeño, seeded and minced
½ cup fresh cilantro, chopped
4 cups shredded lettuce or cabbage
¼ cup cotija cheese
Lime wedges
Dressing Ingredients:
½ cup plain Greek yogurt
½ tsp chili powder
¼ tsp smoked paprika
1 lime, juiced
Salt and pepper to taste
Directions:
Heat the oil in a large skillet over medium-high heat. Add the frozen corn in a single layer. Let sit undisturbed for 3-4 minutes until it starts to turn golden brown and “pop”. Toss and cook for another 2 minutes, remove from heat and let cool slightly.
In a small bowl, stir together all of your dressing ingredients. If the dressing is too thick, add a teaspoon of water or more lime juice to reach your desired consistency.
In a large mixing bowl, toss the charred corn, chicken, red onion, jalapeño, and cilantro.
Pour the yogurt dressing over the salad and fold gently until everything is coated. Top with crumbled cotija cheese and a final sprinkle of cilantro. Garnish with lime wedges and serve!
