Chocolate Peanut Butter Mousse
A rich, single-serve chocolate mousse built to provide long lasting energy. Don’t just give into your sweet cravings, make them work for you.
Chocolate Peanut Butter Mousse
Makes 4 servings
Ingredients:
• 1/2 cup plain Greek yogurt
• 1 Tbsp chia seeds
• 1 Tbsp natural peanut butter (or almond butter)
• 1 Tbsp unsweetened cocoa powder
• 1 tsp honey or maple syrup
• 1/2 tsp vanilla extract
• 1/2 tsp ground cinnamon
• 1 pinch of salt
• 1 Tbsp chopped walnuts or almonds
• 2 squares dark chocolate (85%+), shaved, for topping
Directions:
1. In a small bowl, stir together Greek yogurt, chia seeds, peanut butter (or almond butter), cocoa powder, honey or maple syrup, vanilla extract, cinnamon, and salt until smooth and fully combined.
2. Cover and refrigerate for at least 15 minutes so the chia seeds absorb liquid and the mousse firms up. For a thicker, pudding-like texture, chill up to 2 hours.
3. Stir once, then top with chopped walnuts or almonds and shaved dark chocolate. Serve chilled.
Looking for Modifications?
Add fresh berries on top for a more flavorful profile.
Leave out the the peanut butter and add unsweetened coconut flakes.
For something that more closely resembles ice cream, freeze for 20 minutes instead of refrigerating.
