Beer Can Smoked Chicken
This recipe give you a chicken that is very similar to rotisserie style without the need for a spit. It has a nice juicy meat with a crackly skin.
Beer Can Smoked Chicken
Serves 4
Ingredients:
• 1 whole chicken
• 2 Tbsps kosher salt
• 2 Tbsps brown sugar
• 1 Tbsp smoked paprika
• 1 Tbsp garlic powder
• 1 Tbsp onion powder
• 1 tsp black pepper
• ½ tsp cayenne pepper
• 2 Tbsp vegetable oil
• 1 can beer (any variety), about half full
• 2 garlic cloves, smashed
• 2 fresh rosemary or thyme sprigs (optional)
Directions:
1. In a small bowl, mix salt, brown sugar, smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper until combined.
2. Pat the chicken very dry with paper towels, inside and out. Rub the whole bird (including under the skin and inside the cavity) with oil or, then coat evenly with the spice rub. For best results, let it sit uncovered in the fridge for 1–24 hours to help the skin crisp up; otherwise proceed right away.
3. Open 1 can beer (any variety), pour out about half of it. Poke 2–3 extra holes in the top of the can with a church-key opener. Drop the garlic cloves and rosemary or thyme sprigs into the can.
4. For a SMOKER: preheat to 275°F using a mild wood like apple, cherry, or pecan. For a GRILL: set up for indirect heat — light only one/two burners and aim for 350–375°F on the indirect side. Either way, place a drip pan under where the chicken will sit.
5. Lower the chicken cavity down onto the beer can so it stands upright like a tripod, using the two legs and the can for balance. Tuck the wing tips behind the back.
6. Place the chicken (on its can) upright on the smoker grate over the drip pan, away from direct heat. Smoke at 275°F until the thickest part of the thigh reads 165°F, about 2 to 2.5 hours. Avoid opening the lid often to keep temperature steady.
7. Carefully remove the chicken from the grill or smoker, using care to not drop the can inside. Allow to rest for at least 10 minutes, or until cool enough to handle. Remove and throw away the beer can. Slice the chicken as desired.
