Spiced Lamb Meatballs
Unlike the Italian style meatballs most of us are familiar with, this recipe uses a blend of warm spices and fresh mint to create a savory, fragrant profile.
Spiced Lamb Meatballs
Makes 4 servings
Ingredients:
1 pound ground lamb
¼ cup panko breadcrumbs
1 small shallot, finely grated
2 cloves garlic, minced
2 Tbsp fresh mint, finely chopped
1 tsp ground cumin
½ tsp ground coriander
½ tsp smoked paprika
¼ tsp cinnamon
1 tsp salt and black pepper
Directions:
Preheat your oven to 400° F and line a baking sheet with parchment paper
In a large bowl combine all ingredients. Mix gently with your hands until just combined, overworking can make the meatballs tough.
Roll the mixture into golf ball sized balls and arrange on the baking sheet. Bake for 15-18 minutes until browned and cooked through. For extra color, you can broil them for the last 2 minutes.
