So easy a baby could make it! ….almost.
Sometimes your family might have the best of intentions by making you a beautiful breakfast to celebrate mother’s day. But those good intentions end up with you still taking the lead in the kitchen and having a lot of clean up from the elaborate recipe that was selected. This year, get the relaxing morning you deserve by picking a recipe that is easy to make and doesn’t require heavy clean up!
Dutch Baby, baby!
Serves 4
Ingredients:
3 Tbsp butter
4 large eggs
2/3 cup milk
1/2 cup Kodiak buttermilk flapjack & waffle mix
2 Tbsp sugar
1 tsp vanilla extract
Desired toppings
Directions:
Preheat oven to 425 degrees F. Put butter in a cast iron skillet or oven safe frying pan and put into the oven to let the butter melt and pan heat up.
Place the eggs, milk, Kodiak mix, sugar, and vanilla in a blender. Blend until smooth.
Remove the pan of melted butter from the oven. Pour the batter into the pan and place back in the oven.
Cook pancake for 10-15 minutes, or until puffed and golden brown. Remove from oven and let cool slightly.
Serve with toppings of your choice. I recommend fresh berries and a dollop of vanilla greek yogurt. For a savory option top with poached eggs, goat cheese, and caramelized onion.
Substitutions
Looking for a little crunch? Add some granola, slivered almonds, or pistachios with your fruit and yogurt topping.
Can’t do dairy? Swap the milk out for an unsweetened plant milk of your choice.
