(secret) Salsa
My dad has an amazing salsa recipe that he makes for every large gathering at hour house. He has always said it was a secret recipe, but I am going to share it with you today! It is my favorite recipe to make for big parties and is always a crowd pleaser. You can turn up the heat, or tone it down to fit any spice preference.
(secret) Salsa
Makes approximately 24oz
Ingredients:
1 large yellow onion, quartered
6 cloves garlic
4-10 jalapeños
1 can stewed tomatoes, whole
1 can fire roasted tomatoes
1 can diced green chiles
1 bunch cilantro
salt to taste
tortilla chips
Directions:
In a medium pot, boil water. Add onion quarters, garlic, and whole jalapeños. Cook until onion is translucent and jalapeños have turned from bright green to olive green.
Remove from water and chop the tops off the jalapeños. Chop the bottom 3 inches off your cilantro (you still want some of the stem just not the thick part).
Add tomatoes, green chiles, cilantro, onion, and garlic to a blender. Pulse until big chunks are broken up. Add jalapeños to meet your desired spice level. If the peppers I have chosen are particularly spicy I might only add 4. If the peppers that day are pretty mild I might add 8. Add one at a time and pulse to combine. Taste after each addition until you have reached your desired spice level. Add salt to taste (approximately 1 tsp).
Substitutions
Looking for a smokier taste? Substitute the canned green chiles for 1-2 chipotle peppers in adobo sauce.
Want it a little sweeter? Instead of boiling your onion, caramelize it in a pan for that sweet caramelized flavor.
Not a fan of spice? Remove the seeds from your jalapeño peppers before blending to cut back the spice without losing the pepper flavor.
How do I make this a complete meal?
This salsa pairs great with everything! I use it on tacos, eggs, burrito bowls, and snacks. If you are like me and really drown your food in this stuff, it can count as a serving of vegetables on your plate!
