July 4th Jello
Looking for a festive treat to bring to the BBQ this year? Look no further! While this one is a bit of a time commitment, the steps are extremely easy and a great way to add some festive flair to your dessert.
July 4th Jello
Makes approximately 8 servings
Ingredients:
1 (3oz) package strawberry, cherry, or raspberry sugar free Jell-O
1 (3oz) package unflavored gelatin
1 (3oz) package blue sugar free Jell-O
2 cups boiling water
1 1/4 cups cold water
1/2 cup finely diced fresh strawberries or raspberries
1/2 cup fresh blueberries
1 cup plain Greek yogurt
1/4 cup milk
2-3 Tbsp maple syrup or honey
1 tsp vanilla extract
Individual portion cups
Directions:
In a small saucepan, mix the red Jell-O powder with 1 cup of boiling water. Stir until Jell-O is completely dissolved. Stir in 1/2 cup of cold water. Let cool slightly at room temperature, about 5-10 minutes. Gently add in your diced strawberries or raspberries. Divide the mixture evenly among your portion cups (or on the bottom of a loaf pan). Refrigerate for 30-60 minutes or until set.
Prepare the white layer by sprinkling the unflavored gelatin over 1/4 cup cold water in a small bowl. Let sit for 5 minutes to thicken. In a separate small saucepan, gently heat the milk just to warm it, not to boiling. Add the gelatin to the warm milk and stir until completely dissolved. Remove from heat.
Combine Greek yogurt, maple syrup (or honey) and vanilla extract in a medium bowl. Slowly whisk in the gelatin-milk mixture until thoroughly combined and smooth. Allow to cool to room temperature (about 10-15 minutes). If this layer is too hot it will melt the red layer when you add it! Once cooled, slowly pour the white layer over the red layer in each cup or your loaf pan. Refrigerate for 45-90 minutes, or until set.
Prepare the blue layer by mixing the blue Jell-O with 1 cup of boiling water. Stir until completely dissolved. Stir in 1/2 cup of cold water, let cool for approximately 5-10 minutes. Gently fold in the fresh blueberries.
Once the white layer is set up, slowly pour the cooled blue mixture over the white layer in each cup or in your loaf pan. Refrigerate for at least 3-4 hours until completely firm.
Substitutions
Not a fan of seeds? Skip the addition of berries and stick with just Jell-O

In addition to being fun to look at and tasting great, gelatin is packed with collagen which is great for tendon and ligament health. The addition of Greek yogurt adds a little bit of protein, and the fresh fruit is going to provide some fiber and additional nutrients!
