Mediterranean Chicken Hummus Wraps

Headed to the beach or on a picnic this summer and not sure what food to pack? This is recipe is great on the go and easy to eat on the run! Full of flavor and nutrients, but won’t weigh you down.

Mediterranean Chicken & Hummus Wrap

Makes 4 servings

Ingredients:

  • 4 large whole wheat tortillas, lavash bread, or pita

  • 1 cup hummus

  • 2 cups cooked chicken breast (I like to use rotisserie chicken or diced grilled chicken)

  • 1/2 large cucumber, finely diced

  • 1/2 cup cherry tomatoes, quartered

  • 1/4 cup finely diced red onion

  • 1/4 cup Kalamata olives, pitted and thinly sliced

  • 1/4 cup crumbled feta cheese

  • 2 Tbsp fresh parsley, chopped

  • 2 Tbsp fresh dill, chopped

  • 1 medium lemon

  • Salt and pepper to taste

Directions:

  1. Shred or dice your chicken into bite size pieces. In a medium bowl, combine with all of your cut vegetables and herbs.

  2. Squeeze lemon on top of chicken and vegetables. If you would like a stronger lemon flavor, zest part of the rind as well. Stir to combine. Add salt and pepper to taste.

  3. Assemble the wraps by spreading about 1/4 of hummus evenly over the tortilla with about a 1 inch border along the edge. Spoon about 1/4 of your chicken mixture over the hummus and sprinkle with feta cheese.

  4. Roll wraps in either foil or parchment paper for easy transport. Cut in half on a diagonal (because let’s be honest a diagonal cut just tastes better).

Substitutions

  • Don’t want chicken? Substitute for chickpeas, falafel, or steak.

  • Looking for a little more crunch? Add some romaine lettuce and chopped pistachios.

How do I make this a complete meal?

This one is already a complete meal by itself! If you are looking for a little more substance, try adding a pasta salad, some fruit, or sliced vegetables on the side.
