Watermelon Salad
This salad the perfect light and refreshing addition to any party. It requires minimal prep and is a great combination of sweet and salty. This is a great way to get a little fiber and a lighter option on the table when you are trying to maintain a healthy diet at larger gatherings.
Watermelon Salad
Makes approximately 8 servings
Ingredients:
6-8 cups of cubed seedless watermelon (cut into 1 inch cubes)
1 English cucumber, diced
8oz feta cheese, cubed or crumbled
1/2 cup fresh mint leaves, roughly chopped
1/4 cup extra virgin olive oil
2 Tbsp fresh lime juice
1 Tbsp honey (optional)
1/4 tsp salt
1/4 tsp black pepper
Balsamic glaze (optional)
Directions:
In a large bowl, combine the cubed watermelon, diced cucumber, and crumbled feta with the chopped mint leaves.
In a separate small bowl or jar, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined.
Pour the dressing over the salad ingredients and gently toss to evenly coat.
This salad is best served after chilling for at least 30 minutes to allow the flavors to combine. Add balsamic glaze just before serving.
Substitutions
If you want this to be a finger food, it can easily be turned into individual skewers. Drizzle with your dressing after skewers have been assembled.
Add some more flavor by mixing in some blueberries and halved cherry tomatoes.
If you are looking for a little more texture, add some roasted pumpkin seeds or walnuts on top!
