Peach Overnight Oats
Whether you are rushing little ones out the door, or just trying to find something easy to eat on your morning commute, this is a perfect recipe. It includes all components of a complete plate and is made the night before so you can just grab it and run in the morning!
Peach Overnight Oats
Makes 1 serving
Ingredients:
1/2 cup rolled oats
1/2 cup milk (dairy or soy preferred)
1/4 cup Greek yogurt (plain or vanilla)
1 Tbsp chia seeds
1 Tbsp honey or maple syrup (optional)
1 ripe peach, diced
Dash of vanilla extract
Directions:
Combine ingredients in a jar or tupperware with a lid. You can choose to peel and mash your peach directly in with the rest of the ingredients or save your peach slices to put on top.
Stir everything together toroughly until all the oats are submerged in the liquid and are evenly mixed.
Seal your jar and place it in the refrigerator overnight (or at least 4-6 hours). This allows your oats to soften and the mixture to thicken.
In the morning, open the jar, give your oats a quick stir, and top with remaining peach slices or any optional toppings of your choice.
Topping Suggestions:
Additional sliced peaches or other fruits like cherries, apricots, or nectarines
Unsweetened coconut flakes
Chopped nuts (walnuts, pecans, pistachios)
